{365} 10.11.11

With the weather getting somewhat cooler here in Arizona, I tend to use my crock-pot a LOT!!  I love that I can dump everything in it and it does the cooking while I am at work.  I usually put all the ingredients in it the night before, keep it in the fridge then just pop it in the base and turn it on (helps streamline my morning routine).

Tonight we are having...
Creamy Chicken and Wild Rice
2 cans (10.75 oz each) Cream of Chicken Soup
1 1/2 Cups Water
1 Pkg (6 oz) Seasoned Wild Rice Mix (I am using brown rice instead)
4 lg Carrots (I used a bag of baby carrots to make it easier on myself)
8 boneless Chicken Breast halves (I used 4, since it is only 3 of us)
Mix soup, water, rice and carrots in the crock-pot; add chicken and turn to coat; cook on low for 7-8 hours or high for 4-5 hours until done.

Happy Tuesday!!

Excellent. Funny though, another friend posted this same recipe today. Great minds think alike. Thanks.

This sounds yummy, thanks for sharing, it'll be perfect on those cold Connecticut nights we get in the Fall.
