I just love the Pioneer Woman's blog~she is so down to earth!!! Last night I made this for dinner and it was YUM-O. It got 2 thumbs up by Mike and Josh (which means it is a keeper, and gets a smiley face rating!!). I even lightened it up a bit by using ground turkey (instead of the hamburg), fat free cottage cheese/sour cream, NO YOKES egg noodles, and less cheese than the recipe called for. I did however add some oregano, garlic, basil to the sauce (just seemed a little too plain for me). It is super easy to make and DELISH!!! Have a terrific "middle of the week DAY!!"

mat stack 2 thinking of you...
**oops!!** *accidentally posted my 365 post on this blog last night...sorry to all my subsribed readers for my mistake *blushing* Hi my sweet blog friends!! Boy O' Boy this week is flying by!! I have a super quick post for you today. I actually whipped up this card last night, because I didn't have anything to post for today~not sure if my stamping mojo was present or not, LOL!! It is very clean and simple, that is for sure. I hope to get a visit from the brown truck today *woot woot* My new PTI stamps will hopefully be in 'da house' tonight!!!

it's fall...
Hi all!!
I hope you had a Marvelous weekend!!! My computer is having some issues, so she is going to the doctor today for a check up...I hope she isn't going to be gone long!!!! Let me say...I have sure missed having her over the weekend!!! Luckily I have my backup laptop *smile*

I don't know about you...but I still cannot believe that it is October!!!
I don't have very many Halloween stamp sets, but decided to pull out the I had and get a start on my Halloween stamping.

Since I don't have access to my desktop~I will have to post my family room decor' project later this week (hopefully I well get her (computer) back soon).
While I was visiting my mom in CT a couple of weeks ago, she made a yummy apple cake that I remember having when I was younger...so I whipped one up over the weekend~it was delish and put me in the "fall" mood (even though the temps here in AZ are still in the triple digits).
Here is the recipe if you'd like to give it a try...(it is NOT Weight Watcher friendly!!!).
Yummy Apple Cake
4-6 apples (peeled and sliced) any kind except delicious
3 C flour
2 C sugar
1C oil
4 lg eggs
2 1/2 tsp vanilla
3 tsp baking powder
1/2 tsp salt
1/4 C orange or pineapple juice
combine apples w/ 5 Tblsps sugar and 2 Tblsps cinnamon. combine eggs and sugar; beat until smooth and creamy. add vanilla and oil; beating slightly. combine dry ingredients; add alternately with juice. mix until creamy. using a tube or bundt pan (well greased); place layer of batter, then apples, repeat ending with apples.
Bake at 400 degrees for 15 min, reduce heat to 350 degrees for 1 hour and 15 min or until done.
Enjoy!!

yum~o!!!

Hey everyone!
I hope you had a wonderful Fourth of July weekend! I had such a great FOUR DAY weekend, which was so restful. I even got to make Fresh & Easy buttermilk pancakes for breakfast yesterday morning since Nate & I had the day off :) They were absolutely delicious (though not as good as my mom's homemade ones).
Today, I wanted to share this recipe I saw while watching The Dr. Oz Show. I absolutely love his show because he isn't afraid to talk about those embarrassing medical things that pretty much everyone wants to know about! He also incorporates healthy food recipes & beauty treatments in his show.
These chipotle tacos look so flavorful and delicious... I will definitely have to make them soon! Not
to mention, they are less than $2.00 per serving (2 tacos), which is pretty amazing! Since becoming a lifetime member at WeightWatchers, I am always on the hunt for low-fat, low-calorie, but flavor-packed meals and this one looks like one of those! Hopefully I'll get a chance to make these soon, maybe once we get back from our mission trip to Jamaica next week.
Chef Lala's Cheap Chipotle Tacos
This recipe is great with whole chicken breast, fish, lean pork or shrimp.
Ingredients
Makes 24 tacos
2 lbs chicken breast, boneless, skinless
7 oz chipotle peppers in adobe sauce
12 oz frozen orange juice
4 oz tangerine juice
3 oz brown onion, peeled and sliced
4 cloves garlic, minced
1/4 tsp pepper
4 tbsp olive oil
1 tsp salt
24 corn tortillas
Garnish options:
4 cups shredded lettuce
1/2 cup cilantro, shredded
1/2 cup onion, small dice
1 cup cotija or Mexican skim milk cheese
1 cup tomatoes diced,
2 avocados, sliced
1 cup, fresh salsa
Directions
Dice the chicken breast into small squares. Place chicken into medium bowl. Remove chipotle peppers from sauce, chop coarse. In a large bowl combine orange juice, tangerine juice, onions, garlic, pepper, olive oil and chopped chipotle peppers and remaining adobe sauce. Pour mixture over skewers, marinade refrigerated for 2-4 hours. Add salt to marinade just prior to cooking.
Heat non-stick skillet on medium-high heat and cook chicken for 3 minutes on each side or until to desired doneness. Heat tortillas on griddle until pliable. Top with chipotle chicken, cheese, lettuce and tomatoes, cilantro, onions, and fold in half. Serve with salsa, if desired.
